There are lots of recipes for bbq jackfruit out there. This is the first time I have had a go. I used the spices I had available at the time, but you can adapt them to suit your tastes.
Ingredients
- 1 red onion – sliced
- 1 tin jackfruit – drained and chopped
- Splash olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp celery salt
- splash dark soya sauce
- 15ml cider vinegar
- 10g dark brown sugar
- 20g tomato ketchup (or tomato puree)
- 2 large cloves garlic – crushed (I used smoked garlic in this recipe)
- 100ml water
Method
The method is actually very straight forward for this recipe. The easiest way is to put everything in a wok with a lid on, and simmer for one hour very gently. If it looks like it is drying out add a little more water.
Stir the jackfruit every now and then, breaking the pieces up with your spoon.
When the whole mix is very tender, remove the lid and turn the heat up a little so that the liquid boils off.
The jackfruit is ready to serve when the liquid has gone and the mix takes on a sticky and glossy look.
Serve in burger buns. We had ours with avocado, coleslaw and sweet potato fries.
