Red Onion & Basil Focaccia

Ingredients

  • 350g bread flour
  • 5g instant yeast
  • 20g olive oil
  • 3g salt
  • 260ml lukewarm water
  • Toppings – red onion, red pepper, fresh basil, olive oil for drizzling, sea salt flakes

Method

  1. Mix the flour, yeast and salt together in a mixing bowl.
  2. Pour in the olive oil and water and mix on medium for 5 minutes.
  3. Allow the dough to rest for 30 minutes.
  4. Turn the dough out onto a floured surface and knead by hand for about five minutes.
  5. Put back in the bowl, cover it and leave to rise until doubled in size.
  6. When well risen, turn the dough out onto a floured surface and using your hands push the dough into a rough circle on a heavily floured tray. Try not to knock the air out of the dough while you are shaping it.
  7. Sprinkle your toppings on the dough, drizzle with olive oil and a little sea salt.
  8. Lift the dough onto a preheated pizza stone and bake in a hot oven at 220c for about 25 minutes.
