Chocolate Prune Bread

Ingredients

  • 500g bread flour
  • 10g instant yeast
  • 80g butter or vegan block
  • 60g caster sugar
  • 330ml lukewarm water
  • 3 teaspoon cinnamon
  • 75g dark chocolate, cut into small pieces
  • 75g dried prunes, cut into chunks

Method

  1. Place flour, yeast, butter, sugar, cinnamon and water in a mixing bowl.
  2. Mix on medium speed for 5 minutes.
  3. Cover the bowl and allow to rest for 20 minutes.
  4. Add prunes and chocolate to the dough.
  5. Mix on slow for 5 minutes.
  6. Turn the dough out on to a floured surface and knead by hand for a few minutes to ensure the chocolate and prunes are evenly distributed.
  7. Return the dough to the bowl, cover and allow to rise for 30 minutes.
  8. Prepare a loaf tin by buttering the inside.
  9. Shape the dough and place it in the loaf tin, cover and allow it to rise until doubled in size.
  10. Bake for 45 minutes at 190c.
  11. Turn out on to a cooling rack and allow to cool completely before slicing.
  12. Toast the bread and serve with salty butter.
